Unstuffed Peppers – Vegetarian Style – low fat – one pan meal (just add a nice
salad):
This recipe started out as a quick stuffed pepper and evolved over
time. It became “unstuffed” because one night I just didn’t feel like bothering
to stuff the peppers and add cheese. They taste the same to me if not better
because you have finer chopped peppers mixed in. I use red, yellow, or orange
peppers because I prefer their flavor.
Ingredient list:
2 T. of
Olive Oil or more if you wish
A clove or two of garlic chopped finely
1
small zucchini chopped finely
One pepper, nice sized – chopped finely
1
Onion chopped finely
1 or 2 Stalks of celery chopped finely (I run mine
through the food processer to get it really fine)
A package of Stove Top
Stuffing Mix of your choosing.
In a medium sauce pan, put olive oil and
all the veggies and sauté them until they are soft (can be slightly browned if
you wish). When veggies are done, put 1.5 cups of water into that same pan (I
know that seems weird)and JUST bring it to a boil. Remove pan from heat and
dump in stuffing mix. Give it a quick stir and let it sit covered for five
minutes. Serve.
NOTES:
You can add cheese to this if you wish to add
more calories or low fat cheese. Beans?
I do not add the artery clogging ½
stick of butter the package calls for!
Serves two generously.
