Southwest Vegetarian Loaded Sweet Potato (serves two)
This recipe has been
adapted from Devin Alexander’s recipe Southwest Loaded Sweet Potato. Hers had
ground turkey in it…ground turkey just didn’t do it for me. This one has color
and flavor.
Two sweet potatoes
4 oz. can of chopped green chilies
Salsa
– can be jarred or fresh your choice and quantity as well.
2 T. Fatfree
greek yogurt

guacamole’ or just buy some
Nuke the sweet potato until done:
individually about 5 – 6 minutes
Cut sweet potato in half and place in a
bowl or plate. Open to prepare for stuffing it/topping it
Top each sweet
spud with the following:
1/3 cup (more or less to your liking) with Mexican
corn salad
2 oz. Chopped Green chilies
Guacamole’ – amount is up to
you
Green yogurt
Salsa
Enjoy!
