Pumpkin Walnut Bread (it is sweet but not too sweet)
Preheat Oven to 350 degrees – Makes 2 loaves 8 x 4.5 inch
Ingredients:
½ cup white sugar
1 – 1 1/4 cup brown sugar (depending on your sweet tooth)
3 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
½ teaspoon cloves ground
½ cup vegetable oil
½ cup unsweetened applesauce
4 eggs well beaten
2/3 cup water
29 oz can of Pumpkin (without the spices)
3 ½ cups flour (I used white unbleached whole wheat flour but white is fine)
1 cup chopped walnuts
Directions:
Grease/butter you loaf pans
In a large bowl, add all ingredients and mix very well (what could be easier than one bowl)
Divide the batter between the two greased loaf pans
Bake for 50 – 55 minutes – UNTIL LOAVES TEST DONE IN YOUR OVEN.
Cool for ten minutes and then remove pumpkin loaves to a wire rack to cool completely.
Notes: These can be sliced and then frozen for individual servings. You can add some unsweetened chocolate chips for the chocoholic lover. You can vary the sugars – more or less or heavy on the brown sugar versus white.
