Pot Au Fe: (my chicken stew)
This dish is traditionally made with beef but I
make it with Chicken. A great one pot meal!
I invented my version of this
before I knew what Pot Au Fe was.
Ingredients:
Olive Oil
Chicken
breasts four
1 onion chopped finely
2 garlic cloves chopped finely (or
just use garlic powder, not salt)
Water or Chicken stock
1 14 oz. can of
italian tomatoes (sometimes I add this and sometimes not)
1 cup chopped
carrots
4 potatoes cut into bite sized pieces
1 cup finely chopped
celery
1 cup chopped zucchini
1 cup broccoli cut into bite sized
florets
Fresh parsley and salt to your taste…sometimes I add ginger (love
ginger) or basil
Sautee the Garlic and onion just until soft. Add the
chicken and lightly brown it on both sides. Add canned tomatoes. Add
some
Water or chicken broth enough to cover chicken. Let this simmer for ½
hour. Add carrots, potato, celery, zucchini and gently simmer until they are
almost soft but not mushy. Add broccoli and stick the stalk part into the
liquid in pot and cook/steam gently until just soft (or not…just crunchy
enough). Stir in parsley…serve piping hot. Serve with a salad if you
wish.
Serves four.
